Description
Grapes: Pinot Noir / Clones: 828/927/943
Harvest: 22nd October 2023. Picked at an average of 19 Brix & 10 TA
Winemaking: 70% destemmed berries - 2.2T, 30% whole bunch - 1T; layered in tank to undergo semi- carbonic maceration. Free run juice transferred to stainless steel to complete fermentation with indigenous yeasts. SO2 added at racking and bottling.
Bottled: May 2023.
Closure: Cork with wax seal.
Nose: Red cherry, violet.
Palate: Wild strawberry, redcurrant, raspberry.
Food Match: Serve with game, mushrooms or a good Kentish cheese.
