Description
This is the juice from the final hard press of the grapes which contains too much colour and tannins to be used for sparkling wines. Often it’s discarded or the grapes are just not pressed that hard. For the past few vintages, we’ve experimented with blending the juice and fermenting it in barrel, steel and even plastic.
In 2023, we put all the third pressings into a stainless steel tank for a constantly evolving wild ferment. This bottle contains a little bit of all the pinot noir and pinot meunier that we pressed in 2023. It’s wild on the nose, with a savoury herbal finish with the mid palate showing the fruitiness of the vintage.
This is a fun experimental run which we hope shows that there’s value to be had in every last little bit.
